Mexican Bhel

Serves / Makes : 4

Ingredients
10 flour Tortillas (10” large)
Oil for frying
1 medium Onion finely chopped (1/2 cup spring onions can be used)
1 Green Paper (Bell Paper) finely chopped
2 cups shredded Lettuce
1 16-oz. can Fat-Free Refried Beans
1 Pk Taco Seasoning mix
1 can Enchilada Sauce
1 small can 8-oz.Tomato Sauce
2 cups water
1 cup chunky salsa
½ cup chopped fresh cilantro
½ cup finely chopped fresh jalapeño or green chilies
Cumin powder, Chili powder and Salt to taste
1 cup Shredded Cheddar Cheese

Method
1. Cut flour tortillas in 1” squares and deep fry in oil till golden brown; keep aside.
2. Place the refried beans in a large saucepan, cover the beans with 1 inch of water, and stir in 1 pk of taco seasoning mix. Place over low heat for 10 minutes, stirring occasionally.
3. Place enchilada sauce in another sauce pan and mix with small can of tomato sauce. Add cumin powder, chili powder and salt to taste; use water as needed to achieve desired consistency. Bring to a boil over high heat, and then reduce heat to low, and simmer for 5 minutes.
4. Now take fried tortillas in a serving plate, topped with hot seasoned refried beans and enchilada sauce mix. Sprinkle cheddar cheese to get melts.
5. And mix all the other ingredients to it: onions, green paper, and shredded lettuce.
6. Topped with chopped fresh cilantro.
7. One can add salsa and jalapeño if like really hot.

lime juice

Ingredients
Left over rotis(4)
2 medium sized onions(chopped)
2-3green chillies(chopped)
coriander sprigs(chopped)
salt
black pepper
1 lemon juice
1tsp chaat masala
1/2 tsp mango powder
pinch garam masala

Method
1.divide each roti into 4 halves and deep fry till crisp.
2.add all the ingredients to step 1.
3 mix well.
enjoy with tea.

Ingredients

Cracked wheat fine-1 cup
wheat flour-1/4 cup
onion-1
Green chilli-1
Cumin seed-2 tea spoon
Black pepper-1 tea spoon.
Salt to taste

Method
Method:
*Mix cracked fine wheat and wheat flour in a big bowl.

*Add 4 cup of water in to the mixture.
Should be watery.

*To that add chopped onion,green chilli
cumin seed and pepper.

* Put salt to taste and mix well so that
everything blends well.

* soak this mixture for half an hour.

* Heat tawa and pour the mixture in dosa
shape.

* At the top of the dosa pour few drops
of oil.

*If one side turns light browm turn aside
and leave it to become light brown color.

* Take out from the tawa and serve hot
with chutney.

Note:
*Since this is made of wheat all diet
people and diabetes patience can take
without any hesitation.

Ingredients
Ingredients:
Soya granules 350 gm
Ghee 120 gm
Raisins 20 gm
Saffron A few strands
Water 2-3 cups
Sugar 160 gm
Cashew nuts 30 gm
Small cardamom 2 gm
Warm milk 5 ml
Badam 30gm

Method
Method:
Grate Soya granules into semolina like powder. Soak the saffron in warm milk and keep aside. Coarsely powder the cardamom. Heat 2 tsp ghee in a shallow pan and roast the powdered granules till light golden brown. In separate pan, make thin sugar syrup using sugar and water. Pour this into the roasted stirring continuously till they mix well. Add ghee little by little with cashew nuts, raisins and powdered cardamom. Cook till the ghee starts separating from the halwa. Add saffron just before removing from fire. Serve warm.

Ingredients
5 cups tomato puree
2 tsp saunf(coarsely ground)
2 tbsp chopped fresh coriander
1 cup chopped spring onions
2 tbsp sliced capsicum
1/2 cup fresh corn kernels(optional)
1cup cooked and mashed rice
1 cup low fat plain yoghurt
1 cup ice water
1 tbsp lime juice
salt to taste

Method
make a smooth paste of spring onions,coriander,capsicum and add this paste to the tomato

puree.in a large bowl, pour this tomato puree.now add ice water,corn,saunf,lime juice,salt

and mix well. in a blender, make a smooth paste of rice and yoghurt and add the paste to

the tomato puree and mix well. serve chilled.

this recipe is not just tasty but also refreshing and loaded with vitamins and calcium.a

perfect coolant for the summer.ideal recipe for weight-watchers too!

Recipie for Chana Masala

Ingredients
channa - 1 cup
big onion - 1 finely chopped
tomato - 1 pured
ginger-garlic paste - 1 teaspoon
green chilli - 1 split
chilli powder - 1/2 teaspoon
dhania powder - 3/4 teaspoon
channa masala powder - 1/2 teaspoon
salt - according to taste

Method
1.soak the channa for 8 hours.
2.boil it in a pressure cooker for 15 minutes.(after the whistle simmer it for 15 minutes)then mash a handful of channa in a mixie and keep it aside.
3.add some oil in a kadhai.fry the chopped onions.when the onions are cooked,add ginger-garlic paste,fry for few minutes,then add the pureed tomatoes.fry for some more time.
4.then add chilli powder,dhania powder,channa masala powder and salt.
5.then add the mashed channa .add some water and boil for some time until good aroma ia arrived at.(cook in a slow flame after adding the powders for 15 to 20 minutes).
6.serve hot with chappathi or badura or puris.
